Ingredients

  • 1 1/2 filo sheets (softened)
  • 2 lbs fresh spinach
  • 1 medium onion
  • 1 lb feta cheese
  • Olive oil

Tools 

  • Pastry brush
  • Aluminum pan (about 15 inches wide)

 

  1. Preheat the oven to 365 degrees.
  2. Place spinach in a dry pot.
  3. Grate whole onion. Add to spinach.
  4. Crumble feta cheese. Set aside.
  5. Using the pastry brush, grease the aluminum pan generously with olive oil.
  6. Spread two sheets of filo on the bottom of the pan.
  7. Use four doubled sheets to cover the sides of the pan Half of each doubled sheet should be inside the pan, and the other half hanging outside. The outside half will be folded over the bürek at the end.
  8. Brush the doubled sheets with olive oil.
  9. Layer the filo sheets inside the pan (two per layer) using 1/2 box of filo sheets. Grease each sheet with olive oil.
  10. Add half of the spinach mixture and feta cheese to the pan.
  11. Layer another 1/2 box of filo sheets on top of the spinach and cheese.
  12. Add the second half of the spinach mixture and feta cheese to the pan.
  13. Layer the remaining filo.
  14. Fold the doubled sheets on top of the filo and brush with oil.
  15. Bake the bürek for 1hr 15min – 1hr 30min.
  16. Cool for 1 hr.
